Since we have been at the beach all week and we have a loaded weekend I have decided to make a huge pot of Gazpacho for our weekly meals. If you have never had Gazpacho it is a cold soup chock full of spice and tomatoes! I love it.
Here is my recipie, feel free to add/omit!
Gazpacho Recipe
Ingredients
7 ripe tomatoes, peeled
1/2 red onion, finely chopped1

1 sweet red bell pepper seeded and chopped
3 stalks celery, chopped
3-4 Tbsp chopped fresh parsley
2 Tbsp chopped fresh chives
3 clove garlic, minced
1/4 cup red wine vinegar
1/4 cup olive oil
2 Tbsp freshly squeezed lemon juice
2 teaspoons splenda
Salt and fresh ground pepper to taste

8 drops of Tabasco sauce to taste
2 teaspoon Worcestershire sauce
4 cups tomato juice
Combine all ingredients in food processor. Mix slightly, to desired consistency. Place in non-metal, non-reactive storage container, cover tightly and refrigerate overnight, allowing flavors to blend.
