Okay so if I had all the time in the world my blog would be so much better. However a full time job, the ability to constantly have laundry to do, two puppies and life get in the way :)
I have been wanting to do a number of weekly posts but I fear the weight of commitment on my shoulders. Well here is an attempt at one that I am really excited about. I am not promising weekly...but fingers crossed.
So, I love love love to cook. I also unfortunately have gallstones and I am a baby about removing my gallbladder so...I eat extremely healthy 99% of the time (1% I am sick from a weakness of french fries :)) So here is a stab at a recipe that I love to make, is healthful and also verry easy on the budget.
This is my FAVORITE breakfast...I could probably eat the entire pan myself. They freeze great too so bon appetit!
Energy for your Crazy Day Bars
Ingredients:
Cooking spray
1 cup quick cooking rolled oats
3 cups trail mix (pick one without chocolate and lots of fruit and nuts, you can also add additional fruits and nuts that you love, just adjust portion. ie: if you love craisins ass 1/2 cup and only 2 and 1/2 cups trail mix)
1/4 cup flour
1/4 cup powdered non dairy creamer..any flavor you like (I use sugar free french vanilla
1/2 teaspoon ground cinnamon
1/3 cup honey
i egg white
1/2 cup applesauce
*Optional 2 bananas (GREAT use for over ripe ones)
Directions
Preheat the oven to 350 degrees
Spray a 9 by 13-inch baking pan with cooking spray.
Place all ingredients except the honey, apple sauce and egg white in a food processor and pulse until the mixture is finely chopped. Add the honey apple sauce and egg white and pulse until it resembles a coarse paste.
Transfer to the baking pan and spread evenly. Press down on mixture so that it is flat. Slice your banana's and lay on top. Bake 20 minutes.
